In early Spanish & frontier American West, pit fights featuring grizzly bears were a popular event. The critics labeled them barbaric & gruesome which they were but these arena fights also became a part of American grizzly bear lore.

Wikipedia provides a good definition of bear baiting (see below link) & yes - bears were often tethered (tied up) to wooden posts & in other cases their teeth & claws are removed (e.g., Pakistan) in these types of blood sport events.
